Vegan Roasted Beetroot Dip

I love beetroot especially roasted beetroot! It’s sweet, delicious and good for you. I have pecans in the cupboard at the moment so feel free to use what ever nut you like.

  • 3 washed and peeled beetroot
  • 1/4 cup pecans
  • Half a clove of garlic
  • 3 tbs of coconut oil
  1. Wash and peel 3 large beetroot
  2. Use 1 tbs of coconut oil to coat the beetroot place in an oven pan and roast for 30 minutes.
  3. Let the beetroot cool before combing all ingredients in a blender. Blend until chunky or smooth.
