Vegan Chocolate Pancakes

Nothing like jumping back on the horse – It’s been a loooooooooong while!  After yoga this morning, I came home and said ‘it’s Chocolate Saturday time’. When I lived in Hong Kong every Saturday I created a new recipe usually around one of my favourite ingredients cacao or dark chocolate. After Easter last week, I didn’t think I could stomach anything from Pana Chocolate or Loving Earth (inner child cries) – believe it or not I had reached my raw chocolate quota for the month!  So cacao is was! Cacao is my go to in smoothies and my bliss balls but today I wanted something warmer.  Chocolate pancakes it was!

Vegan Chocolate Pancakes

The Batter

  • 1/2 cup almond meal
  • 1/4 cup hemp protein
  • 1/4 cup oatmeal
  • 1/4 cup cacao powder
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 3 tbs of melted coconut oil
  • 1 1/2 tsp baking powder
  •  2 tbs maple syrup
  • 1 to 1 1/2 cup almond milk (I forgot to work this out add till the right consistency)
  • A little bit of olive oil for the pan

Toppings

  • Coco yogurt
  • Strawberries
  • Maple syrup, vanilla and cinnamon
  1. Combine all dry ingredients together
  2. Stir through melted coconut oil, maple syrup and maple syrup until the right consistency
  3. Heat the pan up and off you go. Take your time, and watch them as there is not bubbles that pop through.
  4. Add your the toppings and sit in the sun and enjoy!
  5. Makes 4 large or 6 small pancakes
